Another week has come and gone~ We started Sunday off with a nice brunch of french toast. Meep likes bacon for his Sunday breakfast (or every meal if he could). I am impartial to bacon (gasps) and like my hot dogs and eggs. YUP.. Hotdogs, not the gross breakfast sausage but just good ol processed hotdogs.
Sunday night – Had leftover roast pork that I did mixed into fried rice! YUMMM…. I was trying to replicate the pattaya fried rice that one could get in Brunei food courts. It is fried rice enveloped by a thin layer of fried egg. Although the egg was not big enough a piece but it turned out pretty tasty!

Monday’s dinner was stir fry broccoli and chinese mushrooms and assam (tamarind) fish with eggplant (brinjal) n cherry tomatoes. I called auntie a few days ago asking her how she made assam fish, but I did not get the taste I wanted so I added tom yum paste to my adaptation.
Tuesday – My fridge was finally cleaned out. Had none of the staple needed. No onions, no ginger, no veggies, nothing! It was pretty sad. So I grabbed a couple chicken breasts and defrosted them. Not sure what I was gonna do with them and saw this “taiwanese style salt and pepper recipe” from Rasa Malaysia. I remember having this before at bubble tea in Richmond, BC and so made my own lil adaptation to this recipe. And to add variety made teriyaki chicken with broccoli.
Wednesday – I expected another long class and because of the lack of staples in the fridge I told Meep to cook himself some instant noodles!
Thursday – I spent the whole day, literally 5 hours out grocery shopping! I was trying to find a little Mediterranean market (International Food Bazaar) but ended up getting a little lost and took over 2 hours to get there. *lol* and then headed to Safeway from there. I bought so many different spices and things to try that I was excited to head home and cook. Ended up spending over a hundred on groceries and Chris had to pick me up from Safeway.
Meep wanted something quick so I made him some Fetuccine Alfredo with shrimp. I like using pre-made alfredo sauce because it is cheaper and just add more flavour using chopped garlic, shallots, white wine, more cheese and parsley. Alfredo sauce from scratch would cost 3 times more that the bottled sauce. This time, we tried Bertolli Alfredo Sauce.
I don’t like cream sauces, so I made myself hot dogs!
Then at midnight, realised Meep had nothing for lunch the next day so I made Kimchi fried rice. In the morning, I heard Meepy open the fridge door and then said “No Lunch?”. No lunch packed for him for the first time coz I forgot! I felt soo bad… *laughs* he sounded so sad! So his lunch and my late night supper…
I had kimchi fried rice the first time a long time ago in Toronto, Canada and then in May I had some in Brunei which I thought tasted like crap. My own creation turned out pretty good for a first attempt. I marinated the meat in kimchi juice, stir fry onion n the meat, add in some veg (I used asaparagus coz Meep loves the stuff) and chili sauce. YUMMMM….
Friday – We were heading out to watch Spring Awakening. So I cooked early and made us Spaghetti and Meatballs! I forgot to buy minced beef so I used minced pork. It was not that bad but I would have preferred to use beef. I never worked with breadcrumbs that wasn’t from a box. Took some bread, broke it up, freeze it a lil, dump it in the food processor and got pretty good bread crumbs!!
Saturday – Headed to San Francisco for Meep’s hockey game~ THEY WONNN… went into overtime but they won!! lol… Came home, cleaned and watched some TV then we had dinner~ Before leaving in the morning, I marinated some chicken in tandoori paste.
I got some tandoori paste and briyani paste for the Mediterranean store. Like I’ve mentioned, I tend to use premade sauces or paste and then add more spices to make the flavours more to my taste. I don’t like bland food and especially love indian food and curries. I remembered a few failed attempts at cooking curry from scratch even after my mom instructed me over then phone… So now I use curry paste and add spices to get the flavour I want and it is way cheaper I find.
After adding yoghurt, butter and salt (as instructed on the bottle) and marinating for about 6 hours, I grilled the chicken on the bbq and finish off in the oven. Served with saffron rice (rice cooked in chix broth and saffron). I always like the saffron rice one can get at Malay weddings or Adilfitri meals.. I should call my mom coz I can’t get the yellowness and sweet salty taste the way I like when I attempt to make the rice.
So there we have it. With my pantry filled with eleven new spices, fridge full of meats n veggies… I can’t wait for next week. I got some tahini… time to make some three bean hummus that Sugarbowl had which I loved!!!
