

This is my rendition. I don’t think there is a rule book when it comes to a dish like this. It is perfect when you have veggies in ur fridge that you need to get rid of.
First time I made this dish was in Vancouver. Back then Dee used to love this over rice, and we would eat it about once a week for a few months. It used to just be spam, kimchi, onions and a little stock. Now I have made many variations but this is my favourite
Mind you, I don’t make the stock myself. I like using this dashi (which is not korean anchovy stock but instant japanese bonito stock). When I don’t have this, I use beef stock~

Ingredients

1/3 lb Pork belly (bout half a cup)/ beef/ lean minced meat/ spam (luncheon meat) – marinate in 1 teaspoon of soysauce and rice wine)
1 cup button mushrooms/King oyster mushroom (or 2 shiitake pre-soaked)
Enoki mushrooms (1 packet)
1/4 medium onion
2 clove garlic
2 stalk green onions
Tofu (1/3 package of soft tofu) – this step by step is missing the “tofu” coz sometimes I like it without but I have pictures of both~

1 1/2 cup kimchi (1 heaping rice bowl) cut up
5 Tablespoon kimchi juice
1/2 Tablespoon Gochujang
1 teaspoon dashi (if you don’t like fishy soups use beef stock)
2 teaspoon fish sauce (nam pla)
2 rice bowl Chicken Broth (Or water)
a pinch of sugar
a dash of sesame oil
(taste and adjust salt or heat level to your preference. Just add more gochujang or some red pepper flakes for heat and more fish sauce if you want more salt)

Step 1 - Heat 1 tablespoon of oil in pot

Step 2 . saute meat, add onions & garlic

Step 3 – While meat is cooking, heat up a small pan and saute kimchi for a min (when I am lazy, I skip this step and just add it straight to the pot)

Stir everything for a good minute or so.

Step 4 – Add mushrooms/other veggies/tofu
Add kimchi juice or gochujang
(if you like it really spicy, add a chili pepper or chili flakes at this step)

Add 2 tsp fish fauce
Add 1 cup/rice bowl of Chicken Broth
Add tofu (if you decide to add it)
Let it BOIL!!

I let it boil for a good 10-15 mins. If I am too hungry, 5 mins works too esp if I used minced meat or spam
Look at the boiling goodness! At this point, add the green onions~
Without tofu VS with tofu~

There you have it, could be made in 15 mins~ serve with rice ^o^ me likes
