61 weeks and still going strong (sorta). I have not been really thinking about what to experiment or cook with lately, because all I can think about is everything I need done before heading home. It is horrible! Well, I am horrible but luckily Meep is not a picky eater and would eat whatever I put in front of him.
Sunday - During lunchtime, Meep kept whining about being really hungry and we did not have any eggs (gasps) so no french toast or eggs & bacon. I ended up whipping together a sweet soy sauce pork with some green onion buns for dipping.
Turned out better than I expected because those buns I bought were really tasty! Then I started getting really excited because we have dinner @ Manresa to celebrate our anniversary.

Monday – made Hainan chicken rice but instead of boiling the chicken, I par boiled it and then steamed it. I preferred the steam chicken rather than boil.
Tuesday – We had so much leftover chicken rice that Meep was happy to polish off as dinner.
Wednesday – I had some tofu in the fridge that needed to be used sooner rather than later. Was gonna prepare some mapo tofu but Meep is not a fan, so kimchi stew was my next go to “tofu” dish.
Thursday – More kimchi! LOL What is faster than kimchi fried rice? Probably kimchi stew~
Friday – went out for dim sum w V at Taipan in Palo Alto.
Got home pretty late so I just whipped together Meep’s favourite Mentaiko udon for him.
I love how the kimchi and extra roe I add makes the noodles almost neon orange. And for myself I prepared some chicken noodle because I felt pretty crappy.
I added wontons, pea shoots and a soft boiled egg. I have been playing around with different ways to cook soft boiled eggs and now my new favourite is – boiling water, pouring into a thermos cup, add the egg and let sit covered for about 7 minutes.
Saturday – After Meep got home from hockey, I was still feeling pretty crappy from the night before so we went out for pho~
Not much cooking this week. I doubt there will be much cooking next week either since Meep will be gone for 6 days. My excuse? I don’t like cooking for one.
