Fried rice noodles with beef and fishballs

One of my favourite quick easy stir fry rice noodles (aka kwae tiau/chow fun)~ This recipe is enough to feed 4-6 people.

You will need:

2 Shallots (sliced thinly)

2 Handfuls of Beansprouts

2 Eggs

3 Stalks Green Onions

8 fishballs (sliced into threes) or 1 Fishcake (sliced)

1/2 lb beef flank (sliced thinly) - marinate beef in 1 tablespoon of light soy sauce

2 lbs Rice Noodles

Note: Feel free to substitute the protein. Chicken, shrimp, fish cakes or squid are all good in this recipe as well~

Seasoning:

1 1/2 Tablespoon Oyster sauce

2 Tablespoon Dark Soy Sauce

1 Tablespoon Sweet Soy Sauce

1 Tablespoon Fish Sauce

Pepper to taste

Step 1: Scramble the eggs.

Then cook them in thin layers in a non stick pan.

Place aside.

Step 2: Pour 2 tablespoon vegetable oil into a hot wok

Add shallots

Remove shallot when golden brown

(Leaving the shallots will cause them to burn when frying other components of the dish)

Step 3: Fry Fishballs/Fishcake for about 3 – 5 minutes

Step 4: Add marinated beef

Fry for about 3 minutes (it should be about medium)

Step 5: Add a little of the seasoning (about a tablespoon)

Step 6: Add noodles 1/2 at a time

Add 2 tablespoons of seasoning in intervals with the noodles, you should have excess seasoning.

Step 7: Mix well

Step 8: Add egg omelets & beansprouts

Mix well

.

Step 9: Add green onions

Mix well

.

Step 10: Add some black pepper

Taste the noodles and add more seasoning mix or pepper according to personal preferences

If necessary, add light soy sauce for more salt

All done!

Enjoy with some Sriracha for a nice kick~
