woooohhooo… 12 weeks of housewify duties and I am proud to say I am holding up. *grin* It is not as bad as I first imagined (more than 13 weeks ago). I have been busy w my venture w Jean, and hopefully I can find a right balance. Haven’t gone to the gym in about a week. Been going to malls and just walking around. I think that compensates not going to the gym. lol…
So recap of last week
Sunday – Mom gave me this chinese cookbook on one of my trips home many years ago. Couple years ago, when Sing visited us in Vancouver, I decided to make this thing call “Beggar’s Chicken”. It was funny when we realised we needed 2 lbs of salt to make a crust for it and had to break it open w a hammer. Worst part was, I did not notice it took 4 hours to make, so we had dinner at after ten pm…. (bad flashback to thanksgiving dinner that was ready at 2 am!! – story for another day)
Neways, it was soo good that I decided to try it again. This time i failed. =( I didn’t use a whole chicken, instead used drumsticks and ran out of aluminium foil, so as expected, a leak happened and my crust was broken. =( and before chicken dried out, I took it out 3 hours earlier and made a sauce
so chicken served with bakchoy n mushrooms ~
Monday – I have been watching this korean series and kept craving korean food. I found a HUGE korean market and started exploring~ It was hard to shop coz some items have only korean instructions or names but no english. I actually ask a cashier to explain the directions on the packaging of seafood pancake to me. lol…
I bought a bunch of stuff to get me started on korean dishes. One of them was a claypot that I made a soft tofu stew w. I used Maangchi’s videos and recipes for my korean dishes. Check out her video

Tuesday – MORE KOREAN!!! lol… I had chicken in the fridge that HAD to be used. So I made my variation of “bulgogi”. Using bulgogi marinade, hot pepper powder, mushrooms and other seasonings…

Wednesday – a break from Korean coz poor Meep needs variation~ I prepared these mini beef wellingtons the night before. Easy as pie… After watching Gordon Ramsay’s video on Beef wellington and some other websites. All i needed was mushrooms, pastry sheets, meat~ I added some cheese to add creaminess..
Meep’s pretty rare version (I like my meat non bloody), served w garlic mash and gravy~ DELICIOUS and incredibly easy.
Thursday – We had this “gathering” of the homeowners of our building along w a donation drive for underprivileged kids. Meep and I donated a brat doll and cute Hello Kitty UNO cards. If Bernard didn’t already get me UNO cards, I would have kept these. lol
We had lil snacks there that were soooo cute. S’mores, caramel cheesecake lollipops and teeny tiny apples along w a chees platter

After the whole gathering. I made dinner. Marinated for about 6 hours. Lemongrass pork chops served w pickled cucumber and fish sauce
Friday – Haven’t cooked this in over a year. Saw a a 900 g packet of rice noodles for $1.49 in the Vietnamese grocery. SO CHEAPP!!! so I cooked fried kwae tiau. I have not found a fish cake I like here yet to add to my fried noodles. =(
Saturday – What a looong day. I have been staying up till 6 am chatting w Jean about our baby stuff. So I could not wake up to go watch Meep play hockey again. =( but they WON! We had more fried kwae tiau for lunch and then went to the mall for glasses and eye exams. For dinner, we had JOLLIBEE!! (i will dedicate a post to how i found jollibee 3 days ago lol…)
Yes… I ate all the above food myself. I am a pig… =( I will prolly gain weight if I don’t consistently stick w gym. =(
There you have it. One whole week of food! lol… I have to post up some recipes soon coz Sing wants to try make chicken rice n burgers that I used to always cook when we all lived together~
